Storing Cakes, Sponges, and Scones
Proper Storage Techniques
- Not all cakes and scones require refrigeration. For example, pound cakes and fruit cakes can be stored at room temperature.
- Once completely cooled, cakes, sponges, and scones should be wrapped tightly in plastic wrap or placed inside an airtight container.
- Frosted cakes or cakes with cream fillings should always be stored in the refrigerator.
- Scones can be stored at room temperature for up to two days or refrigerated for a week.
- Freezing is an option for long-term storage. Remember to protect your cakes and scones from freezer burn by double-wrapping in plastic wrap and placing into a resealable plastic bag.
Shelf Life
- Always consider the shelf life of your ingredients. Fresh fruits or dairy fillings will reduce the overall shelf life of a cake or scone.
- Unfrosted or buttercream-frosted cakes can last at room temperature for 3-4 days, while in the fridge they can last up to a week.
- Plan ahead, if you know a cake will not be served for a couple of days, it’s beneficial to wait to decorate with any perishable items.

Cake Presentation
- Always level your cakes before icing. This not only makes your cake look better but also helps it stand securely.
- Apply a crumb coat of frosting first, chill for a short time, then apply a final layer of frosting. This helps achieve a smooth, crumb-free finish.
- Piping bags and tips can be used for intricate designs or writing on cakes. Practice your technique on parchment paper before decorating the actual cake.
- Edible decorations such as sprinkles, nuts, and fruit can add visual interest and complement the flavour of the cake.
Scone Presentation
- Traditional scones should have a golden-brown top. A little milk or egg wash brushed on top before baking can help achieve this.
- Cut scones neatly and evenly - a round cutter for traditional scones, or a sharp knife for wedge-shaped scones.
- Keep scones plain or add a glaze for a sweeter finish. Simple sugar glaze or a drizzle of icing can make scones more appealing.
