Carrying Techniques

Overview

  • Delivering food and beverage to the table is the core job of a server. Proper carrying techniques are essential for safety, efficiency, and customer service.

Carrying Plates

  • When carrying plates, it’s important to balance them carefully, usually done on the forearm and in the hand.
  • Never stack plates on top of each other, as this could become unsteady and lead to spills or breakages.

Carrying Glasses

  • When carrying glasses, again balance is critical. Use a serving tray and distribute weight evenly across it.
  • Always hold the tray with one hand beneath it to provide support.

Carrying Hot Items

  • For hot items, additional caution is needed. Use heat-resistant gloves or cloths to avoid burns.
  • Make sure all heat-resistant items like hot plates, pots, or tea pots are handled safely and guests are warned when necessary.

Carrying Sharp Items

  • Sharp items, such as knives, should be carried with the point facing downwards and away from the body.

Clearing Techniques

Overview

  • Clearing tables promptly and efficiently can significantly enhance the dining experience for guests.

Emptying Plates

  • Empty plates should be cleared once every guest has finished their meal. Start with the guest who finished first and move around the table in a clockwise direction.

Dealing with Cutlery

  • When clearing cutlery, avoid touching the parts that a guest has used. Pickup cutlery by the handle.
  • Always stack dirty cutlery together separately from crockery.

Handling Leftover Food

  • Remove leftover food effectively and discretely, being careful not to spill. Use a waste bin or chute if available.

Clearing Glasses

  • Glasses should be cleared last, unless they are empty and pose a risk of being knocked over.
  • Like plates and cutlery, be careful when clearing glasses not to touch the rims or inside where the guest has drunk from.

Overall Hygiene

  • Good hygiene practices should be maintained at all times. Wash hands regularly and ensure a clean and neat appearance while working.
  • Wearing protective clothing such as aprons can also prevent spillages from soiling your clothes.

Safety

  • Avoid lifting heavy trays or objects without adequate support and posture. Bend the knees not the waist when lifting heavy objects.
